Dinner @ Wahseem's

We had a dinner invitation from hubby's classmate, Wahseem..yes his name is that..he comes from Mauritius..

Funny things is..Wahseem wanted to eat Nasi Goreng USA badly..coz he studied in Malaysia before and fell in love with Nasi Goreng USA so much..so he wants me to teach him cook Nasi Goreng USA for dinner..or simply cook tegether with him n his wife..

Problem is..i dunno how to make Nasi Goreng USA..hehe...yeah yeah..taula apa korang nk cakap..nasi goreng biasa je..ngan telur mata kerbau n daging masak merah..tapi kalu kat msia..keje beli kat gerai je.jarang nk buat sendiri..he sort of like the same taste he's been having back in Malaysia..he even explains to me how it tastes to him..aarrggghhhh~!!! habisla mati aku kalu x buat yg serupa cam die makan..

I searched like mad for the Nasi Goreng USA recipe..ya Allah...talking about desperation..susah betul nk cari the one that looked good, and recipe that seems similar to what he wanted n like .. and finally i found one..well, it doesnt exactly taste the same macam kat warong2 tu..coz it uses capsicum and fried using butter. but okla..at least ader gak resipi...bukan nye xleh nk hentam je wat..just wanted a guide thats all..kang salah terus kang..habis aku..dahlah si wahseem tu tgh kempunan..kesian lak kat dia..

NASI GORENG USA

Bahan-Bahan:
4 pinggan nasi putih
4 ulas bawang merah [cincang]
2 ulas bawang putih [cincang]
1 biji cili capsicum merah
1 biji telur ayam (digoreng hancur)
1 mankuk kecil daging ayam [dipotong nipis dan kecil]
1/2 cawan mix-vege
1 sudu kecil lada hitam [ditumbuk lumat]
Garam
majerin

bahan hiasan
telur mata kerbau
salad coleslow
daun sup
tomato buah

Cara:
1. Panaskan majerin, kemudian masukkan bahan-bahan yang telah dicincang beserta lada hitam.
2. Tumis hingga naik baunya.
3. Masukkan daging ayam dan biarkan seketika sehingga daging tersebut masak
4. Kemudian masukkan mix-vege dab telur hancur tadi.
5. Kacau hingga semuanya sebati. Masukkan garam dan serbuk perasa.
6. Kemudian masukkan nasi dan gaulkan hingga sebati.
7. Angkat dan masukkan dalam pinggan hidangan

i didnt put daun sup, coleslaw, tomato..just the telur mata kerbau..add a 2 tbsp of blended soaked dried chillies while frying the onions..before adding the chicken..

i think if u wanted something similar to the one sold in warong..avoid the capsicum and fy using oil..

i paste the recipe here, simply because, in case there are people who are looking for the recipe like me and had a hard time finding..they can use this recipe..its full-proof..!! because..it was a hit with wahseem..and hubby..bth agreed that it didnt taste the same as the one in warong..but it was tasty..i serve together with sambal belacan..and it was a great combination..!!

Fuuuhhh...alhamdulillah sangat jadik nasi goreng usa aku..kalu x maluuuu nyeee!!! org msia x reti wat nasi goreng usa!! hahahaha

i will paste the daging merah recipe later sbb malas nk bukak buku resipiku..hehe

Nasi Kerabu MN

Shue..this one's for you..




[Sambal

sebiji Kelapa parut
2 ekor Ikan kembung (dipanggang)
2-3 tsp Bawang Merah (blended)
Garam
Lada Hitam
Gula

1. Sangai kelapa, tapi jgn sampai coklat..cukup garing sikit.
2. Ikan kembung diambil isi
3. Blend kelapa yg dah disangai dgn isi ikan kembong.
4. Gaul dgn bwg merah, garam, gula n lada hitam
* Sambal is preferrably better if it is sweeter

[Kuah]

2 biji kelapa (ambil santan) / 1 tin coconut milk brand AYAM
2 tangkai serai (ambil bhgn putih shj)
4 ulas bawang merah
2 ulas bawang putih
1/2 inci halia
3 tangkai cili kering (approximate)
Gula Melaka/Gula biasa/ Nisan kelantan
Garam
2 keping asam keping

1. Blend serai, bwg putih, bwg kecil, halia n cili kering
2. Masuk dlm periuk n masukkan santan n asam keping
3. Masak atas api sdhn sampai kuah pekat
4. Masuk gula n garam secukup rasa.
* Kuah should taste a combination of sweet, n sour.

[Ulam]

Daun Kesum
Bunga Kantan
Timun
Kacang Panjang
Taugeh
Serai
Bawang Merah (1 ulas)
Halia Muda (1/2 inci)
Cili Merah (1/2 batang)

1. Potong halus daun kesum, bunga kantan, timun, kacang panjang,
serai, bwg merah, halia muda n cili merah.
2. Satukan semua bahan di atas kecuali timun n gaul rata.
3. ulam lain dihidang berasingan

[Lauk]

Ikan Goreng (either goreng kunyit biasa/salut tepung)
Ayam Goreng
Daging Bakar

[Nasi]

Nasi kosong biasa OR
nasi kunyit ( dimasak dgn kunyit n serai + daun pandan)

Tambahan: Keropok ikan n budu

Cara makan: Gaul nasi dgn sambal, kuah, semua ulam
budu and gaul rata n makan..

Roti Puri JAJA + Rendang MAK + Dalca MAMA = RESIPI KELUARGA BAHAGIA

This one is a real kick-off recipe..

This was my first time making a roti puri. Do u know whats a roti puri..hahaha...i dont actually either.. but i guess its a split between roti canai n chapati..n its small in size..very cute.. my first attempt was to me a failure.. i put all 5 tbsp of margerine and it tastes too buttery and by eating 2-3 pieces i grew bored of the taste..after talking to chef JAJA (hehehe) the taste is better when u mix it with ghee..should try that the next time. But my family members were ok with the taste..izzah n hubby ate a lot..hubby even suggested to eat it with kaya..haha..hmm taste delicious!!



[Roti Puri JAJA<]
4 cups plain flour
5 tbsp margerine (u can mix with ghee)- 3 tbsp margerine + 2 tbsp ghee
1 tbsp condensed milk
1 1/2 tsp baking powder
1 tsp salt
Water

Way :
1. Combine flour, baking powder and salt.
2. Put in margerine. mix together.
3. Pour the milk (mix with a bit of water)
4. Pour warm water bit by bit and knead until it forms a dough
and doesnt stick to ur hand
5. Divide the dough into small portions (the size of 50 cents)
6. Roll the dough with a rolling pin (not too thick /thin) and fry with lots of oil.



[Rendang MAK]
(this is for 1kg of beef/lamb)

10 pcs dried chillies
1 1/2 pcs red onion (big)
5 pcs red onion (small)
5 pcs garlic
1/2 inch galangal (lengkuas)
1/2 inch ginger
6 stalks lemongrass (serai)
2 pcs turmeric leaves (daun kunyit)- finely cut
2 coconut milk / 1 tin of coconut cream/milk
3-4 tbsp kerisik
Cili Boh / chilli paste (opt)

Way:

1. Blend all ingredients excpet daun kunyit n santan.
2. Put meat, blended ingredients n coconut milk.
3. Put under low fire, as it helps the meat to become tender
4. From time to time, scrape the mixture so it'll combine evenly
5. Once the mixture becomes thick enough, add kerisik, salt n sugar.
6. The colour should be brown once its done.
Note : You can put in chilli paste/ cili boh to make it hotter (own preference)


[Dalca MAMA]
Beef
Carrot
Eggplant
Long Bean
Potato
Dhal (soaked in water-5-6 hrs earlier)
Pineapple
SPices (cengkih, etc)
Red onion, garlic n ginger (blend together)

I did the dalca just like making the normal curry recipe, which im sure all of u are familiar with the process.
Just add the vegetables and dhal.I added pineapple. According to mama, it'll give a sweet n sour taste. Indeed it is.

Nak sataaayyyy



satay is one of my favourite dish... once, i've eaten up to 15 sticks at one time...(ya Allah...dahsyat kan)..satay haji samuri tau..not the usual one..apparently i like satay hj samuri better than other coz of the nut gravy which tastes better and their satay's are bigger..
but i've heard hubby saying that the satay there isnt as big as they used to be..apparently there was a change of management... uhh...but never mind..still like it anyway...

Since satay here in perth is quite expensive..dlm 8 dollar dpt 6 cucuk je, yelah its not their customary food so we decided to make it our own.

This is my 2nd attempt to make satay. The first time it doesnt taste as good. so i dig up for more recipes and tried this one which was alhamdulillah to me and my hubby's satisfaction.. Syukur alhamdulillah..

Satay

Bahan A
450 g daging
450 g isi ayam
sejari kunyit hidup / 1 tsp serbuk kunyit *
250 g gula pasir
4 biji bawang putih *
sejari halia *
2 tbsp biji ketumbar *
1 tbsp jintan putih (cumin) *
1 tbsp jintan manis (fennel) *
2 btg serai *
* Semuanya dikisar

Bahan B1 biji buah keras - tumbuk
1 tsp gula pasir
1 tbsp air
1 tbsp minyak

Semua bahan dicampur bersama

Bahan C8 biji buah keras *
60 g asam jawa
2-3 biji bwg besar (saiz sdhn)*
6 biji bwg putih *
240 g gula
30 batang lada kering * ikut citarasa pedas masing2
2 cawan kacang tanah (digoreng)
2 batang serai - dititik
1 tsp belacan *
3 cawan santan
Sejari Kunyit hidup *
sejari lengkuas - dititik
Garam

Cara (Bahan A)

1. Daging cuci bersih dan ditoskan. Potong ikut citarasa masing2.
2. Gaul daging yg telah diptong dengan rempah kisar, gula dan garam sehingga
rata. Perap 2-3 jam, baru dicucuk dengan lidi.
3. Bakar atas tempat pembakar satay/ oven / gril.
4. Renjis dengan bahan B dan bakar sampai garing n masak
5. Hidang dgn kuah sate, nasi impit, timun n bawang.

Cara (Bahan C)

1. Kacang tanah dikisar, jangan terlalu halus.
2. asam jawa diramas dgn 6 cawan air dan ditapis
3. Tumis rempah kisar sehingga garing n enak baunye
4. Masukkan serai n lengkuas titik. Tuang air asam. kacau rata
5. Masuk gula n garam
6. Masuk kacang tanah last sekali dan masak sampai mendidih n naik minyak dgn
api sederhana
7. Masak smpi desired consistency. Simpan semalaman lagi sedap.

Tideous isnt it? haha...yup..biler dah terdesak mmgla rajin wat..especially i was fasting that day..so macam2 la nak makan.. but if im back in msia..i wouldnt guarantee ill still do it.. it depends on demand from my hubby n kids..hehe but anyway..about the recipe..

i halved all the ingredients since i only used half amount of the chicken n meat.(sape lak nk makan kalu wat banyak2 kan..)I didnt have kunyit hidup, so i only used serbuk kunyit. I cooked the satay in the oven n soak the skewers (btg lidi) in water so it wont burnt, but still it got burnt...maybe i shoudlve soaked them longer.. satay taste better when they're sweet..so i used around 200g of sugar for both kuah kacang n the satay marinate..
During baking the satay in the oven, i drizzle some of the marinate on top of the satay...maybe next time i shouldnt have done that, which resulted the satay to taste a little bit bitter.. n the satay was not shiny like usual.
But overall the taste is there... Alhamdulillah..
